The Holiday Season is Upon Us!

Can you believe it's almost Christmas? I was driving Morgan to preschool today and was still baffled that Halloween and our trip to the pumpkin patch has already come and gone. Amazing.

For Thanksgiving we went to Steve's parent's house. I had every intention of taking a ton of great Thanksgiving pics, but only managed to get one or two of the kids eating dinner, and playing with olives. You know, the whole ones. That is the most memorable part of Thanksgiving besides the pie, right? Speaking of pie... for the last few years, I have made a pumpkin roll. I have never really been a fan of pumpkin pie, but these pumpkin rolls are divine, and I still buy that can of pureed pumpkin. I got this recipe out of a magazine years ago, and it's just delish:

Pumpkin Roll

Cake:
Powdered sugar
3/4 cup all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon salt
3 large eggs
1 cup granulated sugar
2/3 cup pure pumpkin

Filling:
1 pkgs. cream cheese, softened
1 cup sifted powdered sugar
6 Tablespoons butter, softened
1 teaspoon vanilla extract
Powdered sugar

Preheat oven to 375. Grease jelly roll pain, line with wax paper (approx 10x15). Greas and flour wax paper. Lay out towel and sprinkle with powdered sugar.

Combine flour, baking powder, baking soda, cinnamon, cloves, and salt in small bowl. Beat eggs and sugar until thick. Beat in pumpkin. Stir in flour mixture. Spread evenly into pan. Bake 13-15 minutes or until top of cake springs back. Immediately turn cake onto prepared towel. Remove wax paper and roll cake up with towel, starting at the narrow end. Cool on a wire rack.

Beat cream cheese, powdered sugar, butter, and vanilla extract in a small bowl until smooth. Carefully unroll cake, remove towel, and spread cream cheese mixture. Reroll cake, wrap in plastic, and refrigerate for at least an hour. Sprinkle with powdered sugar before serving.

This roll is such a hit at my house!

I know that if I am struggling to find something to make for dinner, and I pull out a recipe book, if there are two recipes on the page, and one of them has a picture of what it's supposed to look like, I will go with that recipe. So, for Barb, I googled and found this pic. Mine sliced as perfectly as this one did when served ( lol ):


It really is quite delicious. Who doesn't love sugary cream cheese? It looks like this one has walnuts on top. I didn't do that because of the choke hazzard for the kiddos, but it works well with those too.

Anyway, I got a couple of pictures with olives, but I did let Morgan play with the camera for a minute or two. This is the best shot she got:

LOL! Miss PJ doesn't seem to appreciate her camera time, does she? It's such a clear photo, though. Too bad she didn't get her whole face, scowl and all. :)


Oh man, it's almost Studio Calico time! Less than two days before Paypal can have a hand on the December kit, right?! Oh my gosh, if you haven't already subscribed, you really need to march on over there. I am so inpired by those kits every month. I can't wait to share my projects!

  3. crud, i had half a can of pumpkin puree left over from making cheesecaken and i threw it out because i didn't know what to do with it....but i'm thinking i should've kept it for this recipe cuz that sounds delish ;)

  9. I make the same pumpkin roll recipe every year. My friend Gwen in MN gave it to me. My family LOVES it!!!
    I triple the recipe so I can use the whole can of pumpkin. Then I can freeze two rolls for later in the season.
